There are many benefits to getting outside detaching from the office and electronic gadgets. Plus there’s something deeply satisfying about cooking things over a fire. If you’ve never done it before, your next camping trip is the time to do it. May is official start to camping season in Canada, so let’s update your recipe file to include three delicious, easy to store campfire barley dishes.
Barley Flatbread
If you have made campfire pizza before you know the crust can be finicky, but this puffy flatbread is the ideal campfire crust. The flatbread can be made ahead and stored one week in a re-sealable plastic bag, plus it can be frozen for up to one month. At the camp, place two thawed breads in the cast iron frying pan, brush them with tomato sauce and top with your favourite ingredients.

Any prep work you can do at home including chopping and bagging the pizza ingredients prior to the camping trip will promote safe handling, save you time, packing space, and reduce waste at the camp.
Fruit, Nut and Barley Squares
Full of nutrient-dense, delicious ingredients, these squares will keep you fuelled for a canoe ride or working around the campsite. The barley flour, flakes, flaxseeds, sunflower seeds, and almonds provide smart carbs, healthy fats, and fibre. To sweeten things up these squares are packed with fruit, including dates, banana, dried apricots and cranberries to energize you with antioxidants, vitamins, and minerals.

This recipe makes 24 squares. After baking, cool and cut into squares. Place two to four squares in freezer bags and pop them in the freezer until you are ready to pack the camp cooler.
Vegetable, Bean and Barley Stuffed Peppers
This recipe provides four mini-meals or hearty sides when you make them ahead. Wrap them individually in foil and refrigerate, then just reheat them on the campfire. Barley, black beans, mushrooms, zucchini, onions and cheese will give you energy to participate in your favourite camp activities (that doesn’t include checking your phone and email!).

Store the four foiled-wrapped peppers in a large freezer bag so they can be easily pulled from the cooler as the “stuffed peppers meal.”
