Need a tasty, nourishing snack that will last you throughout the day or an easy homemade goodie that will keep the kids happy? Our Barley Granola Bars are the perfect bite to eat!

A foil-lined pan is not essential but will help to cleanly remove these bars from the pan after they have cooled. Lift the uncut bars out of the pan by grasping the foil. Peel off the foil and slice into bars with a sharp knife.

Ingredients

  • 1 cup (250 mL) barley flakes
  • 1 cup (250 mL) bran flakes
  • ½ cup (125 mL) unsweetened coconut
  • ½ cup (125 mL) raisins or dried cranberries
  • ¼ cup (60 mL) packed brown sugar
  • ¼ cup (60 mL) smooth or crunchy peanut butter
  • 3 Tbsp (45 mL) butter
  • 2 Tbsp (30 mL) liquid honey
  • ½ cup (125 mL) semisweet or dark chocolate chips

Preheat oven to 275°F (135°C). Lightly grease a 9-inch (23 cm) square baking pan or line pan with foil that extends up the sides and slightly over the edges of the pan.

In a large bowl, stir together barley flakes, bran flakes, coconut, and raisins or cranberries.

In a small saucepan over medium heat, whisk brown sugar, peanut butter, butter and honey just until mixture is blended and smooth. Pour mixture over dry ingredients; stir well to combine. Add chocolate chips; stir just until they are distributed throughout mixture.

Press mixture evenly into prepared pan. Bake for 30 minutes. Let cool completely before cutting into bars.

Makes 18 bars.
