Smart Cookies

Ingredients

¼ cup (50 mL) peanut butter
¼ cup (50 mL) margarine
1/3 cup (75 mL) brown sugar
1/3 cup (75 mL) white granulated sugar
½ tsp (2 mL) vanilla
1 egg
¾ cup (175 mL) whole barley flour
½ tsp (2 mL) baking soda
½ tsp (2 mL) salt
½ cup (125 mL) rolled oats
½ cup (125 mL) corn flakes
½ cup (125 mL) raisins or nuts
½ cup (125 mL) chocolate chips
1 tsp (5 mL) water

In a large bowl, beat peanut butter, margarine and sugars together until smooth. Beat in vanilla and egg. Add flour, baking soda and salt. Stir until combined. Add remaining ingredients. Spoon onto a cookie sheet and bake at 375⁰F (190⁰C) for 10 to 12 minutes.

Makes about 2 dozen (24) cookies.
