Quick Breakfast Bread

Ingredients

¾ cup (175 mL) whole barley flour
¾ cup (175 mL) whole wheat flour
½ cup (125 mL) cornmeal
2 tbsp (30 mL) brown sugar
1 tbsp (15 mL) baking powder
½ tsp (2 mL) baking soda
1 tsp (5 mL) ground cinnamon
1 tsp (5 mL) ground ginger
1 egg, beaten
1 cup (250 mL) applesauce
1 cup (250 mL) buttermilk

In a large bowl, mix flours, cornmeal, sugar, baking powder, baking soda, cinnamon and ginger. In another bowl, combine egg, applesauce and buttermilk and stir mixture into dry ingredients, mixing well. Pour batter into a greased 9 x 9 inch (2.5 L) pan. Bake in a 400⁰F (200⁰C) oven for 25 to 30 minutes or until a cake tester or toothpick inserted in the centre comes out clean.
