Superfoods—the word just says it all. They’re SUPER! Blueberries. Coconut Oil. Chia Seeds. Kale. Barley.
Superfoods are naturally jam-packed with health benefits in rather small doses. As a self-proclaimed nutrition foodie, I’m always on the hunt for food that nourishes the body. After all—food can transform your life, you just have to eat what makes you feel good.
Today, I’d like to introduce you to an “old-school” superfood. Barley is an ancient grain with amazing health benefits and definitely should earn a top spot on your superfood list.
Barley is incredibly versatile (which let’s face it, not all superfoods are) and provides the body with an incredible amount of nutritional value. According to barley’s health claim, it’s a great source of protein, dietary fibre, vitamins, minerals and antioxidants—all amazing supplements for boosting energy and cleansing the body’s system. This superfood also makes you feel fuller longer, which supports healthy weight loss. Long story short, barley is a nutritional powerhouse—and our bodies love it!
Today, I’ve decided to share with you my four favourite barley recipes that will put you on the path to feeling great!
This smoothie is an amazing way to start your day. I find this smoothie keep me full until lunch time and I can get creative with changing it up with new fruits, juices/coconut milk and adding kale or hemp protein when I feel like it!
2. Barley Pomegranate Salad
Not only is this salad beautiful, but it’s a fiesta of wonderful spring flavours. With its medley of flavours inspired by Middle Eastern cuisine, this salad is a nice balance for chicken or lamb dishes, or as a vegetarian meal on its own.
3. Baked Barley Potato Pancakes
This meal leaves my stomach extra happy. These barley and vegetable pancakes are light and lacey, with a crisp exterior and satisfying chewy texture. Serve with sausages, applesauce and yogurt for breakfast, lunch or dinner!
4. Avocado, Shrimp and Barley Lettuce Wraps
I don’t know about you, but I LOVE lettuce wraps. The barley adds a nutty flavour that goes well with a thai dipping sauce. The barley will also keep you full & satisfied longer! Serve as an inspired appetizer, or prepare the night before, wrap the lettuce leaves separately and enjoy a fresh flavour-packed… packed lunch!
